I'm currently trying to build a gaming setup, and would like to help for that. I have a budget of around 300000 isk, including screen, keyboard and mouse.
I'm interested in getting best bank for buck, and was hoping I could get help.

What kind of gaming will you be doing? Will the pc be used for anything else than gaming?

I really like playing apex legends and Cs go, and would like to be able to play cyberpunk at decent graphics. Mostly gaming, and maybe play a bit of guitar and singing into it later. General use too

There are new graphics cards to be announced on September 1st which are reported to be a big upgrade over the current lineup, RTX 2000 series.
You could buy a used graphics cards since people are getting rid of 1000 and 2000 series cards rapidly before the new ones that are coming up.

For this budget including peripherals you'd probably want to go with a Ryzen 3600 + B550 motherboard (B550 allows you to upgrade to Ryzen 4000 later).

For general usage I'd opt for an IPS monitor and since you're playing esports titles you'd want it to be high refresh rate.

If colors are viewing angles aren't important to you a similar monitor with a TN panel will cost 30-40k isk less.

You want to go with 16GB or more of DDR4 ram, preferably 3200-3600mhz for the AMD platform.

For storage you want an NVME pcie3/4 drive at least 500GB, preferably 1TB.

It's still impossible to beat the Ryzen 5 3600 paired with a cheap motherboard in the bang-for-the-buck aspect.
You could probably live with a GTX 1660 Super just fine and save yourself 31.000 kr. but since you said Cyberpunk 2077 at decent graphics I went with a stronger option. The CPU Cooler is technically optional since the R5 3600 comes with its own cooler, but I would personally not use that one because it is very loud.

How long does it take for the announcement of the gpus and until it hits shelfs here in Iceland??

It has a 8700k cpu and GTX 1080ti which is still outperforming 2060 super and 2070 super and is trading blows with a 2080 super

Have 6700K + GTX 1080ti combo myself and I couldn't be happier.

I would personally wait for the new GPU line to drop or get a used 2060 6GB for 40k if you can.
The B450 will be supported for the upcoming Zen 3 CPUs for later upgrade if you wish, just needs a BIOS update beforehand.
I put "User preferences" because it is entirely up to you what peripherals suits you the best
